The IICRC S500 standard sorts water by contamination. The category decides what can be dried and kept, what has to come out, and which service page is the right one to read first.

Burst flexi hose, hot water system, supply pipe
Clean supply water that has not been sitting long. Most materials can be dried in place if extraction starts the same day.
Water damage restoration - Category 2 · Grey water
Dishwasher, washing machine, or clean water left for days
Carries contaminants, so drying is paired with antimicrobial treatment. Carpet is case by case; underlay usually goes.
Flooded carpet drying - Category 3 · Black water
Creek or river flood, sewer backflow, storm surge
Grossly contaminated. Porous materials that touched the water come out, the structure is sanitised, then dried.
